My New Favorite Salsa

I didn't realize that my draft was almost a month old, so here it is today, not from April :)

Pineapple Salsa

*Warning*- once you start eating, it is so hard to stop!!!

  • 1 (15 oz) can of Black or Kidney beans, drained and rinsed
  • 2 (8 oz) cans of crushed Pineapple, drained (I use 1 large can if i don't have small ones
  • 1 (15 oz) can of Corn, drained
  • 1 (14.5 oz) can of diced tomatoes
  • 1/2 cup chopped fresh cilantro
  • 1/3 cup Italian Dressing
  • 2 Tbs Lime Juice
  • Bag of Lime Tortilla Chips

Mix all ingredients together. Best if served cold, but if you can't wait - dig in.

That Time of Year

The kids picked their lambs that they are going to be working with this summer to show at the county fair. Randy and Wes will be showing their lambs also at State Fair in Great Falls in July.
Randy really isn't that short and his lamb is not a giant. He is kneeling down :)
It will be fun to see how things go this summer and also at the fair!!

Life is Good- continued...

Have I really forgotten what a fun, beautiful and handful little boy he was?? I remember sending him outside so that we could get ready to go to town and I need just a few minutes inside to be ready. Needless to say we were a little late, but I must not have been to upset, if I took time to take pictures. Again Life IS Good!!

Henry Plummer

Wes was Henry Plummer for the 4th & 5th grade live wax museum. He made his own poster and wrote his own script. He did a fantastic job presenting his person to hundreds of people as they went around to all of the different kids and the person they were. He looked very authentic!! Great Job Wes :)
